Today I had the opportunity to visit Pieology Pizzeria in St. Paul Minnesota’s Highland Park neighborhood. This location opened on October 28th and is owned by Minnesota Vikings player Matt Kalil.

According to, Kalil owns all of the Minnesota franchise rights and is expecting to open approximately 15 locations in the next several years. It makes total sense the first location was in Mankato, home of the Minnesota Vikings training camp. Along with this Highland Park location, a Maple Grove location is coming soon.

Pieology Pizzeria has approximately 60 current or planned locations, mainly located in California, Oregon and Arizona, but has recently expanded to Minnesota, Ohio, Texas and a few other states. There are franchising rights still available in the Mountain, Central and Northeast regions of the United States.

So what exactly is Pieology Pizzeria? Think of this as the Chipotle of Pizzas, as they make “kustom” made, artisan-style pizzas, flash fired in five minutes in an oven at approximately 475 degrees fahrenheit. All 11.5 inch pizzas you create your own for a low price of $7.95, but you can also get a Pieology gluten-free option for another $2.00. In addition, they do have seven different pre-determined choices, such as the Classic Cheese Pie (only $6.45) to a Fiery Buffalo Chicken Pizza (still $7.95).

The pizza making process starts with choosing a sauce. Pieology has three different sauce types: red, herb butter and olive oil. Next comes the cheese where there are four selections: mozzarella, ricotta, parmesan and gorgonzola. Pieology also offers six meats: pepperoni, sausage, meatball, chicken, ham and yes, bacon! For those veggie and fruit lovers, you have a wide variety of selections from black olives, mushrooms, red onions, green peppers, artichokes, tomatoes, garlic, pineapple, jalapeños, fresh basil and cilantro. Add all the toppings on top and it’s all still the same price!


After you have piled high all your toppings, into the oven your pizza goes for the flash fired process. The process of flash firing food requires a very high amount of heat and goes perfectly with a thin crust pizza. If you have too thick of a pizza crust and way too many toppings, one of the fears of flash firing food in an unbalanced cooking process. Here at Pieology Pizzeria, they cook their thin crust pizzas at approximately 475 degrees fahrenheit for approximately five minutes.


Both of my lads love pepperoni pizzas and the youngest lad added a mound full of bacon to round out their pizzas. As you can see in the picture below, the pizza came out cooked perfectly, with a slight char around the edge of the pizza crust. But have no fears, the crust was nice, crispy and golden brown. Just the way I like it.


For those non-pizza lovers (yeah right) there are also a couple of pre-made salads available, such as a chicken caesar salad as well as chicken and gorgonzola salad with a raspberry vinaigrette. Lastly for your sweet tooth, Pieology Pizzaria also has cinnamon sugar strips.

The boys really loved the end-result and they cannot wait to go back again to try another “kustom” creation. So the next time your in the mood for a quick and easy pizza pie, please give Pieology Pizzeria a try.
